That means he doesn’t just tend bar, he treats the bar like a second home for anyone who pulls up a seat. “You want a guest to feel at home when they pull up to your bar. It should be like going to a friend’s house where everyone comes in and has fun. When a guest walks in and I say welcome home, I sincerely mean it.” Jimmy Joe said.
Jimmy Joe considers himself to be one part bartender and one part mixologist. He can make a guest a great cocktail whether it be as old school as an Old-Fashioned or as current as a bacon-infused Manhattan. What the guest wants, the guest gets from Jimmy Joe at Cover 3.
“My goal is to make a consistently great cocktail with fresh ingredients and quality spirits whether I’m making one drink or a 100 drinks. My secret ingredients are pride and passion for what I do.” Jimmy Joe explained.
Jimmy Joe has a long history in the Austin restaurant business. He got his start at 16 making salads, appetizers and desserts at Shoreline Grill as a Pantry Chef. He became a Bartender in 1994 at the Z-Tejas location on West 6th Street where he was told to sink or swim. Lucky for us, Jimmy Joe is most at home behind the bar and especially here at the bar at Cover 3 where there’s no question he has skills. Jimmy Joe’s favorite drinks are the Jack and Coke and the Cover 3 Press.
